Z is for Zucchini Muffins
At the end of each school year the preschool in which my children attend has an Alphabet Party. Each child is assigned a specific letter and needs to bring food that either begins with that letter or is in the shape of that letter. This year Honor was assigned “Z”. (yup, we got z … it might have something to do with my mom being the director of the school!)
So, what did I do? Well, first off I did what most mom’s do these days … I did a Google search of “foods that begin with Z”. I found a recipe for Zabaglione (a type of whipped custard) … but it was a bit labor intensive for me and didn’t seem to preschooler-friendy. I thought about buying and baking some Stouffer’s Baked Ziti. But then I remembered the gluten-free chocolate zucchini muffins I had in the freezer! Perfect! I already have them, super easy, individually wrapped, and kids like ’em. Trouble was there was only 14 in the box … and I needed 30. So off to Costco … but they didn’t have that flavor anymore. And the Costco near my husband’s office didn’t have that flavor anymore. Hmmm … back to the laptop to find a Zucchini muffin recipe and make myself!
But I didn’t have to make them myself … in fact I had two little helpers!
The kids really enjoyed shredding the zucchini on the grater. I explained to Henry that all he had to do was to rub the zucchini against the grater. He had a blast and became a zucchini shredding ninja! Click through to see a super funny video the my husband took of the “Zucchini Rubbing” (definitely blackmail worthy for when my son is older!).
Honor did a super job of helping me mix up the ingredients, scoop the mix in the ZEBRA patterned muffin cups, and bake them in the oven.
They ended out looking great and tasting SUPER yummy … and the bonus was being able to add in a serving of veggies while my kids felt they were getting a treat!
